Der Doemensianer - the magazine of the Doemensian Alumni Association and the Doemens e.V. - is published by W. Sachon and is the official trade publication of Doemens Academy in Gräfelfing.

Reports on the academy and the individual chapters of the Doemensian Alumni Association as well as information on courses and seminars keep readers of the Doemensianer - mostly former students - up-to-date, yearbook style, with the brewing academy in Gräfelfing.

Just like Doemens Academy itself, theory and practice within the pages of the Domensianer are closely linked to bring compelling updates.

Vision

Redesign the image and the value perception of this millennial and traditional beverage, uncovering its historical, philosophical and cultural importance. The styles diversity and the gastronomic versatility at the service of the intelligent appreciation.

Mission

Develop competencies and skills necessary to exercise ethically the profession as beer sommelier, spreading the beer culture and proposing different beer styles and their pairing possibilities to contribute in pleasurable dining experiences.

Notice

The so-called „Doemens Beer Sommelier International Course“ takes place once per year. The schedule and teachers of the course are identical to the German „Biersommelier Course“. The only difference is that the international course is completely in English.

Trappistenbiere

Viele Gerüchte ranken sich um Bier brauende Mönche, die entschleunigt in ihren Klöstern auf Anlagen aus längst vergangenen Tagen Biere herstellen. Wenig bis nichts von der Wirklichkeit des Klosteralltages ist bekannt, handelt es sich doch immerhin um einen Schweigeorden. Doch was genau geschieht wirklich in den Brauereien hinter den Klostermauern, welche Bierstile und Biere werden gebraut? Welche Klöster dürfen sich eigentlich mit dem Trappisten Siegel schmücken?


Im Seminar wird nicht nur die Möglichkeit geboten, alle im Handel erhältlichen Trappisten Biere verkostet, auch wird der klösterliche Hintergrund beleuchtet. Geschichte und Geschichten über eine Gemeinschaft, die sich dem Motto
„Ora et labora“ verschrieben hat.
